Peter Morrell, Editor, comments “I recently cooked a Pork Thai Red curry using Thai Dragon Curry Paste and it was delicious. The main ingredients are Dried Red Chilli, Shallots, Lemongrass, Garlic, Galangal, Coriander Seeds, Cumin and Kaffir Lime Leaves. Some of these items are difficult to buy, so the convenience of having them all neatly wrapped up in a paste is huge.

I added some coconut mik, sugar, red pepper, lime juice, and fish sauce to create the perfect Thai dish. The food was light, fragrant, and packed full of flavour. I served it with plain basmati rice and livened this up with a few squirts of Thai Dragon Sweet Chilli Sauce, the chilli is muted in this, more fruity than hot, and adds an extra dimension.
